On behalf of our client, a well-established and growing Italian dessert manufacturer specializing in high-quality cannoli, tiramisu, cakes, and other traditional frozen and baked goods, we are seeking a skilled and motivated Production Baker & Recipe Development Specialist to join their production team.

Direct Hire

Pay Rate: DoE

Schedule: Monday – Friday, 6 AM – 4 PM / Saturday 6 AM – 2 PM

Position Summary

This individual will be responsible for overseeing daily production operations, refining recipes, ensuring compliance with company policies, and maintaining the highest quality and safety standards. The role also serves as the backup to the Production Manager in their absence, making leadership, technical expertise, and adaptability essential.

This is a hands-on position, requiring strong bakery and pastry production skills, equipment operation knowledge, and the ability to mentor and support production staff.

Key Responsibilities

  • Supervise daily production activities, including mixing, baking, frying, and decorating.
  • Ensure efficiency, consistency, and quality in all product lines (Cannoli shells, Creams, cakes, Tiramisu).
  • Monitor workflow to meet production schedules and deadlines.
  • Recipe Refinement & Innovation (Experience with dough is a Plus)
  • Collaborate with management on new product development.
  • Standardize recipes and procedures for scalability and efficiency
  • Operate and train others on industrial ovens, fryers, mixers, unifiller depositors, and cake decorators and cake cutting machines.
  • Ensure equipment is properly maintained and used safely.
  • Provide guidance, training, and support to production staff.
  • Act as a role model in enforcing company policies and food safety procedures.
  • Serve as backup Production Manager, including overseeing staff, scheduling, and reporting.

Compliance & Quality Control

  • Uphold food safety, sanitation, and workplace safety standards.
  • Maintain accurate production records and reports.
  • Identify and implement process improvements to reduce waste and increase efficiency.

Qualifications

  • Minimum 5 years of experience in bakery, pastry, or food manufacturing production.
  • Strong knowledge of mixing, baking, frying, and decorating techniques.
  • Hands-on experience operating commercial equipment (ovens, fryers, mixers, depositors, decorating tools).
  • Supervisory or team lead experience strongly preferred.
  • Knowledge of food safety regulations (HACCP, GMP, or equivalent).
  • Excellent leadership, problem-solving, and organizational skills.
