Overview
Position Title: Executive Sous Chef- Catering
Reports To: Executive Chef
Salary: $90,000 - $95,000
Pay Grade: 13

This is a Sunday through Thursday, daytime schedule.
Responsibilities
Oversee commissary and a high-performing food production team while maintaining a safe and sanitary work environment
Prepare or direct the preparation of meals in accordance with corporate programs and guidelines
Plan menus according to established guidelines
Follow standardized recipes, portioning and presentation standards; complete and utilize daily production worksheets and waste log sheets; taste meals to ensure quality
Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation per Company and regulatory standards
Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas; ensure schedules are followed
Maintain inventory of food and non-food supplies within guidelines; ensure availability of necessary products
Make decisions regarding utilization of leftover food products within Company guidelines
Comply with federal, state and local health and sanitation regulations; support audits
Follow facility, department and Company safety policies and procedures, including incident reporting
Participate in departmental meetings, staff development and professional programs as appropriate
Preferred Qualifications
5 years of progressive culinary/kitchen management experience, depending upon formal degree or training
Extensive catering and high-volume food production experience required
Institutional and batch cooking experience
Hands-on chef experience is required
Knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
Proficiency with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, email and Internet
Willingness to participate in client satisfaction programs/activities
ServSafe certification is highly desirable
