Develop a beverage program, focusing on the types of drinks offered, brands of liquor used, recipe development, costing, pricing, photos, vendor support and menu placement. Scope to include non-alcohol, wine, beer, and cocktail items. Order all hotel beverage & bar related supplies including non-alcoholic beverages and maintain a sufficient inventory. Forecast sales, sales mix and adjust offerings based on demand and budget. Manage beverage operations across all F&B outlets: beverage par sheets, monthly inventory values, and ordering to meet par. Execute beverage ordering to meet or exceed budgeted figures, maintain beverage vendor accounts, and maintain a master list of vendor contacts. Ensure beverage orders are delivered accurately, properly stocked, and invoiced prices are correct; process invoices following hotel accounting procedures. Review cost fluctuations with the restaurant manager & F&B director and apply strategies to improve performance. Initiate and implement marketing and up-selling techniques to promote restaurant food and beverage programs and maximize revenue. Ensure associates have up-to-date knowledge of F&B offerings, events, and pricing; train bartenders and servers on beverage knowledge as needed. Promote beverage programs and increase sales through outside promotion of the hotel’s F&B using social media or other platforms. Create and maintain a curated selection of non-alcoholic and alcoholic beverages; demonstrate knowledge of beverages, recipes, mixing procedures, and recipe costing & monthly mix analysis. Create and maintain details on all beverage menus and ensure POS programming is up-to-date and correct. Maintain a safe and sanitary work environment for all associates and guests; adhere to all legal and company policies and standards for beverage service. Qualifications
Four years of relevant F&B experience and/or training; or equivalent combination of education and experience. Must be a TIPS certified trainer (training for intervention procedures) within 30 days of hire; must also have Serve Safe certification. College degree, or 5+ years of extensive experience in the alcoholic beverage industry; Certified Cicerone level, and/or level 2 or higher Master Court of Sommelier. Flexibility to work nights and/or weekends. Strong written and verbal communication; ability to interpret and perform computer and POS system functions with knowledge of Oracle Symphony, OpenTable, Outlook, Word, Excel, and multiple social media platforms.
