Basic Function

The Director of Catering is an experienced planning professional who possesses excellent sales and managerial skills. The Director must also possess inherent good taste and superior creative abilities to set standards in the special events field. The Director must display the ability to invent unique theme concept designs, breaking new ground to ensure maximum client satisfaction. Qualifications

Education, Knowledge, Training, & Work Experience College degree or equivalent experience/training in conference management. Five years of experience in the hospitality industry with at least three years of experience associated with Corporate Conference Centers or Conference Center Resorts. Prior experience with managing financials and development of budgets. Knowledge of conference service equipment and set-up styles including but not limited to meeting room set-up, banquet set-up and audio-visual equipment. Two years of experience in interior and floral design and application, catering and menu selection. Ability to accomplish necessary tasks on a computer. Computer knowledge including Microsoft Office (Word, Excel, Outlook, PowerPoint), Delphi or similar database systems. Ability to effectively communicate in the English language. Detail oriented, sharp organizational skills and strict with time management. Ability to multitask in stressful situations. Essential Functions

Working with the Director of Sales and Marketing and the General Manager with regard to Catering / Banquet functions. Maintaining a review of sales levels to maximize revenues and assist in reaching budgeted goals. Stay up to date current trends and innovations in the special events field. Oversee all operational aspects relative to all groups including planning, set-up, audio visual and conference concierge operations. Overseeing room designs, and in some instances being available during the installation and set up of decorations, etc. Overall responsibility for resort sponsored events including design concept, arrangements and coordination, installation of decor, room set up, and entertainment. Coordinating all off property catering activities, including: meeting with the client, coordination of the arrangements and overseeing delivery and set up, etc. Handling VIP treatments, including fine detailed arrangements, gifts and special amenities. Developing departmental procedures and delegating responsibilities to employees of the department. Provide general supervision as well as guidance and training on a daily basis. Manage assignment of groups to conference planners ensuring an equal distribution of work load. Maintain a regular presence on the floor to ensure quality of employee performance and adherence to hotel service and grooming standards. Meet with each group planner to discuss issues. Provide a forum for problem solving with clients relative to any group issues. Exemplify positive attitude, encourage employee morale and problem solve any employee issues. Lead by example. Promote the property vision and service standards on a daily basis. Provide support for Planning, Audio Visual, Conference Set-Up and Conference Concierge on a daily basis. Meet with Conference Floor Manager on a daily basis to discuss issues and plan for upcoming events. Personnel procedures, including the following: interviewing, hiring, training, disciplining, terminating, transferring, handling transfers, employee performance reviews, promotions, increases and demotions within the Department. Marginal Functions

Effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds Adhere to the policies of the Resort as set forth in the Employee Handbook and report any observed violations to Human Resources. Maintain the highest level of employee/ guest relations. Maintain a good working relationship with all Departments. Stay current with Delphi trace list and account data. Required to perform other tasks and duties as assigned. Scheduled hours may vary on business needs and may or may not include holidays, weekends, various shifts, overtime or reduced hours.
