$75,000 – $85,000 per year Primary Responsibilities
Execute all kitchen policies, procedures, standards, and training programs set by management. Collaborate on menu planning for a‑la‑carte, large‑format, and pastry menus. Support hiring, scheduling, and payroll for all kitchen staff. Ensure proper staffing for productivity and quality. Lead daily BOH meetings and preservice lineups as needed. Guide creation of menu descriptions and procedures for all FOH/BOH employees. Provide continuous training and development of chefs and cooks. Update recipes and food costing tools in a timely manner. Manage sourcing, purchasing, and maintain vendor and farmer relationships. Fill in where needed on stations to meet service standards and efficient operations. Guarantee state and company compliance, including safety & sanitation, purchasing programs, and client requirements. Support front‑of‑the‑house and back‑of‑the‑house in all business aspects. Deliver on financial and food sanitation goals of the operation and overall business. Required Skills
Creative problem‑solver passionate about innovation. Organized, dependable, and self‑motivated. Team builder with ability to manage and develop teams. Independent worker able to manage up and down. Willingness to work 50+ hours per week as needed. Flexible schedule, including days, evenings, weekends, and holidays. Standing position minimum 8 hours a day. Reach, bend, and lift up to 50 pounds. Required Experience
Minimum 3+ years of kitchen management in a fine dining environment. 5+ years of Italian/Korean cooking experience, including wood‑fired cooking. Experience in dough making, enforcement of safety/sanitation standards, equipment maintenance, expediting, inventory, kitchen cleaning/sanitation, meat butchery, portioning, receiving/organizing, scheduling, and vegetable breakdown.
