Primary Duties and Responsibilities: Works with the Food and Beverage Operations Manager to achieve the established P&L guidelines. Assists in hiring, training, evaluating, disciplining, and scheduling supervisors and line staff. Responsible for requisition and inspection of all products and maintenance of inventory par levels. Assists in preparing payroll. Secondary Duties and Responsibilities: Maintains health, safety, and sanitation standards of the restaurant according to set guidelines. Promotes culinary concepts in marketing and public relations efforts. Maintains a working relationship with tenant partners and actively participates in marketing the restaurant concept. Minimum Education and Qualifications: Bachelor’s Degree in Hospitality or Business Administration. Three years of experience in a high-volume complex Food and Beverage or casino environment, with at least one year supervisory experience in a gourmet-specialty restaurant. In lieu of a formal degree, two years supervisory experience in a high-volume or gourmet-themed restaurant. Competencies: Intermediate knowledge of Micros, Stratton Warren, Word, Excel, and Lotus Notes. Excellent written and oral communication skills. Training Requirements: Must complete and pass the Core Supervisor Training course. Excellent understanding of beverage service techniques, food preparation, products, and cooking techniques, including table-side service. Thorough understanding of P&L evaluation, sales forecasting, budget costs, utilization, and Key Volume Indicator analysis. Physical Demands and Work Environment: Ability to stand for long periods with frequent bending and lifting. Ability to lift up to fifty pounds. Flexibility to work various shifts and hours. Ability to sit at a computer for short periods. Fast-paced kitchen environment.
