Our future Sous Chef loves cooking delicious food, is hardworking, dedicated, and experienced, with a complete understanding of the central kitchen cycle, including receiving, breakdown, production, holding/cooling warehousing, inventory management, and distribution logistics.

Responsibilities
Preparing meals and food to meet the specifications of clients in a timely manner.
Train new staff on cooking principles and DOH guidelines.
Properly measuring kitchen ingredients and food portions.
Ensuring kitchen staff adhere to set standards, procedures, department rules, DOH guidelines and sanitation requirements.
Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
Managing the kitchen inventory and ensuring supplies are fresh and of high quality.
Ensuring proper food temperatures when cooking and proper storage afterward.
Keeping the workstation and kitchen equipment clean, organized and sanitized.
Taking charge of kitchen opening, closing and other side duties as directed by the Culinary Director.
Ensure the quality and consistency of all food products.
Develop and update recipes to meet company standards.
Create and report new yield data and enter this information into the system.
Contribute innovative ideas for menu enhancements and improvements.
Suggest and implement strategies for improving overall operational flow.
Work collaboratively with other departments to ensure smooth and efficient operations.
Ensure food is made on time and in full accordance with production and packing schedules.
Maintain up-to-date temperature logs to ensure food safety.
Adhere to FIFO (First In, First Out) inventory management principles.
Successfully execute the production of 19,000+ meals daily.
Stay ahead of production schedules to ensure no less than two weeks' worth of meals are produced in advance.
Constantly monitor production pace and maintain optimal workflow to meet high-volume production goals.
Work to consistently meet or exceed production targets and deadlines.
Qualifications
NYC Food Handlers Certification.
Bilingual, English/Spanish.
5+ years cooking in manufacturing or High-Volume Catering, commissary.
5+ years supervisory experience in food production.
Strong knowledge of USDA, FDA, DOH, GMP, and HACCP rules and regulations.
