Coordinate food service activities of the Club Dining Room, Walnut Lounge and Beach Hut Plan or participate in planning menus and utilization of food surpluses and leftovers, considering probable number of guests, marketing conditions, popularity of dishes, and menu age Assist Executive Chef and Chef de Cuisines with back-of-house objectives when appropriate Plan, organize and execute Club dining/Walnut Lounge events, programming and activations Observe methods of food preparation and cooking, portion sizes, and garnishing to ensure prescribed standards Establish annual KRAs (key results areas) Establish and enforce nutrition and sanitation standards for the restaurant Estimate food and beverage costs; requisition or purchase supplies for front-of-house operations Consult with Executive Chef, management and other staff to maximize menu options and related activities Monitor inventories of uniforms, service items and forms Inspect food and preparation to maintain quality standards and sanitation; delegate with follow-up Investigate and resolve food quality and service complaints Develop and nurture relationships with club members Review financial transactions and monitor budget to ensure efficient operation within budget Must be available to work mornings, evenings, holidays and weekends as needed Other duties may be assigned Supervisory Responsibilities
Manages subordinate managers who supervise employees in Club Dining, Walnut Lounge and Beach Hut Responsible for overall direction, coordination and evaluation of these units Hiring, training, performance appraisal, and employee relations per policy and law Qualification Requirements

Fifth year college or university program certificate; or three to five years related experience and/or training; or equivalent combination of education and experience. Language Skills
Ability to read and interpret general business materials; ability to write reports and business correspondence; ability to present information to groups. Mathematical Skills
Ability to calculate figures such as discounts, interest, commissions, proportions, percentages, and volumes; basic algebra and geometry principles. Reasoning Ability
Ability to solve practical problems and interpret instructions in written, oral, diagram, or schedule form. Certificates, Licenses, Registrations
Must have and maintain a current Food Handlers Card. Must have a valid driver's license. Other Skills and Abilities
Ability to use a networked PC with working knowledge of Word processing and POS systems. Physical Demands
Typical work requires constant use of hands, standing, walking; occasional lifting up to 25 pounds; vision requirements; and other standard physical demands with reasonable accommodations available. Working Conditions
Work is performed in a restaurant/club environment with exposure to heat, outdoor conditions, and other typical restaurant conditions.
