Beverage Manager

BOKA Restaurant Group . Location: Chicago, IL. Salary:
$80,000.00–$85,000.00
per year. This role reports to the General Manager and is responsible for managing the floor, opening and closing the restaurant, and supervising employees. Responsibilities
Complete opening tasks and conduct a pre-shift walkthrough to ensure the restaurant is set for service and staffing is optimal. Lead pre-shift meetings as required and manage floor operations during service following restaurant procedures. Assist with seating guests, communicating with the kitchen, delivering service, and ensuring restaurant and restroom cleanliness. Monitor guest experience to drive positive reviews and guest satisfaction. Direct and support team members during shifts, escalate major issues to senior management, and manage daily staff performance. Monitor restaurant emails and respond to guests; escalate serious issues as needed. Perform closing tasks at end of shift as assigned. Management & Leadership
Develop staff education programming, prepare training materials, and assist with day-of training sessions. Assist with hourly employee hiring, interview candidates, and refer strong candidates for final decision. Support personnel file management following HR procedures. Participate in employee development, performance reviews, and escalation of employee concerns as directed by senior management. Attend weekly management meetings and prepare staffing schedules for GM review. Foster a professional, growth-focused, positive work environment; support the team with special projects as needed. Follow BRG uniform guidelines and ensure staff compliance. Financial Performance & Acumen
Maintain inventory for assigned categories, track inventory, manage to budget, and place orders. Manage monthly beverage inventory, ensure proper storage, adherence to recipes, and cost/pricing accuracy in inventory and POS systems. Understand invoice coding and submission; assist with daily labor audits and tip entry in payroll systems. Track performance against goals for Sales, COGS, Labor, and Comps; follow day-to-day financial systems as directed by senior management. Participate in management training as scheduled. Beverage Program Responsibilities
Maintain beverage program (spirits, beer, wine, non-alcoholic) including list management, purchasing, and inventory. Utilize Inventory Management Software for weekly/monthly analyses; perform monthly inventories. Assist with hiring, training, and scheduling of sommeliers and bar teams; educate staff on the beverage program. Work with the bar team on seasonal cocktail changes and proper storage of beverage products. Physical Requirements
Lift and move up to 10–25 pounds regularly and up to 50 pounds occasionally; stand and walk throughout shift and navigate stairs and varied surfaces. Managerial Expectations
Provide hospitable, professional, and proactive leadership; communicate clearly with staff, peers, management, and guests. Be flexible and adaptable to changing needs of the restaurant and BRG for the benefit of the group. Demonstrate accountability, punctuality, and a strong work ethic; lead by example. Be solution-oriented with the ability to prioritize tasks and manage multiple responsibilities under pressure. Be ambitious, receptive to feedback, and committed to continuous development.
