Executive Chef – NYU Langone Orthopedic Hospital (Full-time, 37.5 hrs/week, varied days; includes weekends/holidays)

Overview

Working as the Executive Chef, you will oversee kitchen operations, maintain a safe and sanitary work environment, and prepare or direct the preparation of meals in accordance with corporate programs and guidelines. This role involves leading daily culinary operations, recruiting, training, and developing onsite staff, and delivering show-quality food while improving resident, employee, and client satisfaction and financial performance.

Responsibilities

Lead daily culinary production in meal preparation, quality, presentation, safety, sanitation, and profitability.

Determine food presentation and create decorative displays; provide direction on menu development and seasonal specials.

Source fresh ingredients; monitor produce and meat freshness; conduct inspections to maintain product consistency.

Develop menus using local foods and flavors; prepare and cook foods for regular service and special events.

Demonstrate new cooking techniques and equipment; supervise and coordinate cooks and staff in food preparation.

Ensure compliance with federal, state, local, and company health, safety, and sanitation standards.

Provide guidance and performance standards to subordinates; communicate safety procedures and monitor compliance.

Monitor quality of raw and cooked products and enforce food safety guidelines; manage purchasing, receiving, and storage standards.

Business, Financial Acumen

Participate in development and implementation of community business strategies aligned with client mission and values.

Manage department controllable expenses (food cost, supplies, uniforms, equipment) and develop cost controls.

Develop and manage budgets; forecast and control labor and food costs to meet objectives.

Monitor revenue opportunities, analyze financial and operational data, and adjust plans as needed.

Oversee inventory, purchasing, and disbursement of food supplies; schedule staff based on forecasted volumes.

Customer Service and Team Leadership

Create 100% resident satisfaction by training and equipping team members to deliver best-in-class service.

Maintain professional demeanor when engaging with residents and staff; respond to guest needs with guidance and coaching.

Empower employees to provide exceptional service; ensure ongoing training and clear expectations.

Foster genuine hospitality, teamwork, and continuous improvement in customer experience.

Lead team meetings, set performance and budget goals, and maintain an open-door policy for feedback.

Team Building and Management

Provide training and resources; ensure fair and equitable treatment; monitor performance and provide coaching as needed.

Equip team members with necessary tools and feedback to meet objectives; support engagement initiatives.

Qualifications (Preferred)

A.S. or equivalent experience; 5+ years of progressive culinary/kitchen management experience (depending on degree/training).

Extensive catering experience; high-volume, complex foodservice operations experience preferred.

Institutional and batch cooking experience; hands-on chef required.

Strong knowledge of food trends, sanitation, cost controls, and presentation; computer proficiency (MS Office, Outlook, Internet).

ServSafe certification is highly desirable.
