Essential Functions
Performs processing inspections in state and/or federal plants on a variety of fresh, smoked, cured or cooked meat and poultry products.
Conducts antemortem and postmortem inspections of animals and poultry at state and/or federal plants.
Inspects processing procedures in plants to ensure proper product formulations and labeling.
Submits product samples for laboratory analysis to determine compliance with laws and regulations.
Performs other duties as required or assigned within the scope of the enumerated duties.
Minimum Qualifications
High school graduate or equivalent, preferably with courses in algebra, biology, or chemistry.
Successful completion of an agency‑approved meat and poultry inspection training program.
Preferred Qualifications
Working knowledge of methods and techniques of antemortem and postmortem inspections involving meat‑producing animals and poultry.
Working knowledge of applicable laws, rules, and regulations governing the inspection and processing of meat and poultry products.
Knowledge of additives and preservatives used in processing meat and poultry products.
Experience in conducting antemortem and postmortem inspections of animals, poultry, carcasses, and parts for disease or abnormal conditions.
Experience in dissecting and analyzing glands, organs, and parts of animals for signs of disease.
Elementary knowledge of computer hardware and software.
Experience operating the agency’s computer and database applications.
Experience analyzing compliance of processing procedures and formulations with law and regulations.
Conditions of Employment
Valid driver’s license and ability to travel between job assignments.
Ability to lift materials up to 20 pounds, bend, and stoop during inspections.
Successful background check and criminal history disclosure.
Tolerant of unpleasant odors in slaughterhouses and meat preparation areas, extreme cold in meat lockers, and heat in processing areas.
Use of safety practices around dangerous meat cutting and processing machinery.
Willingness to work overtime, including weekends and holidays, when required.
Pass a pre‑employment physical examination.
Must reside in Livingston, Ford, or McLean County east of Interstates 39 and 74.
