The Sous Chef is responsible for ensuring the highest quality preparation of fine cuisine for Stillwater Bar & Grill, located in The Lodge at Pebble Beach. The Sous Chef will direct the preparation of food, upholding the highest standards of culinary quality.

Base pay range $75,000.00/yr - $88,000.00/yr

Essential Duties & Responsibilities

Assist in the preparation of daily food orders.

Check the quality of daily specials before service.

Conduct daily huddles with the culinary team and participate in front‑of‑house huddles.

Interact with guests regarding special needs and requests.

Maintain a professional attitude in a high‑volume environment.

Adjust schedule based on business levels.

Prepare weekly schedule for all cooks to meet business needs while managing staffing and overtime.

Submit daily requisitions using the system in place (e.g., Eatec).

Train kitchen staff in their individual duties and required skills.

Mentor and manage kitchen employees.

Work holidays, weekends, and special events.

Control waste and spoilage through detailed logging per SOP.

Perform month‑end inventories.

Assist in seasonal menu review and revisions.

Prepare and cook food to the highest standards in a timely manner.

Report any faulty equipment or unsafe conditions to Engineering.

Communicate effectively with staff from both front and back of house.

Required Skills

Five years of luxury resort or hotel experience.

Two years of experience as a Sous Chef.

Unexpired Food Safety certification.

Excellent cooking, supervisory, and sanitation skills.

Knowledge of all kitchen stations.

Broad knowledge of varied cuisines and ability to integrate regional ingredients into menus.

Ability to present cooking demonstrations.

Computer proficiency in MS Office Suite, including word, Excel, and cost‑control apps.

Valid California driver’s license.

Desired Skills

Graduate of an accredited culinary program or apprenticeship under a highly respected chef at a premier restaurant, resort, or hotel property (preferred).

Certification by the American Culinary Federation and a Sous Chef certification (preferred).
