Job Summary The La Jolla Beach & Tennis Club is currently seeking a Line Cook to join our beautiful oceanfront restaurant.

Hourly rate: $24.50
Responsibilities
Consistently provide professional, attentive, and genuinely friendly service
Promote and follow LJBTC, Inc.’s Signature Service standards and requirements to ensure a lasting impression of exemplary service resulting in satisfied and loyal members and guests
Prepares entrees and hot appetizers for patrons
Prepares food in quantities according to menu and number of persons to be served in a timely manner
Prepares a large variety of finished products (e.g., salsas, chutneys, infused oils)
Maintains work area and cooking equipment in proper and sanitary order
Prepares and plates food to order in accordance with approved recipes
Covers, dates, labels, and stores food items and ingredients during the scheduled shift
Supplies plated starches, vegetables and miscellaneous accompaniments to hotline and receives plates from hotline for finishing with sauces and garnishes
Communicates with expeditor to ensure smooth transition of finished plates to front of house
Uses advanced knife skills to produce brunois, macedoine cuts, etc.
Responsible for complete setup of mise en place for all menu and related special items ten minutes prior to service
Adheres to proper rotation and sanitation standards at all times
Properly closes and turns over work area at the end of shift, assuring proper storage and minimal waste
Attends regularly scheduled kitchen meetings
Other duties may be assigned
Qualifications
One‑year certificate from college or technical school, or equivalent combination of education and experience
Ability to read and interpret documents such as safety rules, recipes, operating and maintenance instructions, and procedure manuals
Ability to write routine reports and correspondence
Ability to speak effectively in English to customers, management, and employees
Ability to add, subtract, multiply, and divide; calculate figures and amounts such as discounts, proportions, percentages, and volume
Ability to apply common‑sense understanding to carry out instructions furnished in written, oral, or diagram form; deal with problems involving several concrete variables in standardized situations
Must be able to obtain and maintain a current Food Handlers Card
