Base pay range: $80,000.00/yr – $90,000.00/yr.
Location: Paso Robles, CA. The Executive Chef reports to the General Manager and oversees all back‑of‑house operations, including menu development, staffing, ordering, food safety, and cost control.
Responsibilities
Oversee daily BOH operations, including menu development, staffing, ordering, food safety, and cost control.
Oversee the execution of the Granada culinary program, Nightcap food, room service, the hotel breakfast, in‑house and off‑site special events, and holiday menus.
Manage all BOH staff, cost all menus, and be responsible for product ordering, inventory control, proper food handling, safety, cleanliness and maintenance of BOH spaces and equipment.
Work with FOH management to assist with staff training and proper service.
Collaborate with the Events Manager to plan and execute special events menus.
Ensure successful execution of all holiday and special services and update and modify Bistro Food Menus under the direction of Nomada Hospitality.
Order food, ingredients and supplies based on business flow.
Develop and update menus as directed by the Restaurant Operations Director.
Maintain inventory levels and conduct monthly full inventory.
Maintain kitchen cleanliness, ensuring proper food storage and adherence to health department standards.
Control food and labor costs within set budgets.
Maintain company safety and sanitation standards.
Oversee hiring, training, scheduling and coaching/counseling of all BOH employees.
Adhere to company policies regarding missed breaks and meal periods, and take appropriate disciplinary actions.
Work with the General Manager, NH Directors, and the FOH Manager to ensure brand standards are maintained, costs are controlled, and the work environment remains clean and safe at all times.
Work with the Director of Restaurant Operations to keep BOH documents (recipes, costing, order guides, prep lists) up to date and properly stored.
Work with the FOH manager to ensure proper food handling, presentation, and FOH staff menu training.
Plan, coordinate, and implement special events and holiday menus together with the events manager and FOH manager.
Work weekends and holidays, overseeing the preparation and execution of busiest services.
Attend weekly management meetings.
Conduct yearly performance evaluations for all subordinates, outlining goals and ensuring policy adherence with documented disciplinary action when necessary.
Prepare for and participate in monthly financial meetings with Nomada Hospitality.
Work with Human Resources to train kitchen staff on elements of the Workplace Safety Program.
Qualifications
Previous applicable managerial experience in a restaurant kitchen, preferably at a hotel.
Possession of a California Food Handlers card and understanding of food safety, sanitation and regulations for workplace safety.
Ability to maintain compliance with applicable health, safety, food handling, and hygiene codes and standards.
Ability to work quickly and efficiently in a fast‑paced environment.
Physical Requirements
Must be able to stand, reach, stoop, bend, lift, and clean during various activities throughout the shift.
Must be able to cut and chop foods and perform other related tasks.
As needed, must lift products or supplies up to 50 lbs.
Exposure to heat, steam and cold present in a kitchen environment.
