Sous Chef We’re looking for an experienced Sous Chef to join Sapporo‑Stone Brewing. In this role, you’ll oversee all kitchen functions, mentor staff, and ensure every dish meets our high standards while coordinating with event crews and front‑of‑house staff.

Compensation and Benefits

Pay Range: $23.00/hr – $27.00/hr

Additional Pay: Eligible for Hospitality Incentive Bonus Program

Responsibilities

Lead, train, guide, delegate, and support all kitchen team members.

Oversee preparation of meats, seafood, poultry, vegetables, and other food items using broilers, ovens, grills, fryers, and other kitchen equipment.

Supervise shifts, communicating labor/service needs and updates with other managers, kitchen staff, peers, crew members, events department, and fans.

Assist management with recruiting, onboarding, and performance reviews.

Ensure all recipes, kitchen specifications, and standards adhere to company expectations.

Maintain sufficient food pars, inventory, and station products, rotating as needed.

Lead teams through opening and closing duties, meeting outlined standards.

Collaborate with event crew, front‑of‑house crew, and management to deliver exceptional fan experience.

Support Event Chef and crew with event menu specifications and execution.

Train and demonstrate required skills at all kitchen stations to meet service needs.

Comply with federal, state, county, and municipal regulations regarding health, sanitation, and safety.

Keep workstation area clean and sanitary.

Ensure quality, accuracy, timeliness, and consistency of each menu item.

Collaborate with the Kitchen Manager on ordering and requisition of food products and supplies.

Monitor vendor product quality and report issues.

Communicate needed storage practices, labeling, dating, and inventory levels.

Minimize waste, inventory shrinkage, and over‑usage of food products.

Create a motivational environment with open communication.

Requirements

High School Diploma or GED; Culinary degree preferred.

At least 4 years of related experience as a Sous Chef in a food service operation with sales exceeding $4M, or equivalent education and experience.

Proficiency with Microsoft Excel, Word, PowerPoint, and Outlook.

Must possess ServSafe and/or San Diego County Food Handlers Manager Card.

Occasional travel to events and other bistro locations.
