Join the team at Hershey Country Club, a private premier golf and recreation club. This position supports the Executive Chef in all aspects of the culinary operation and maintains primary ownership of a la carte dining in the Hogan Grill Restaurant. Job Duties
Create menus and develop standardized recipes and techniques for a la carte dining.
Hire, train, supervise, and develop culinary and stewarding team members; schedule and monitor kitchen staff to ensure efficient and safe operations.
Enforce sanitation and safety practices to maintain legal and hotel standards.
Order, requisition, and maintain inventory control of food products to ensure quality and adequate supply.
Manage variable cost centers to ensure profitability with food product and labor costs; maintain updated costing for a la carte dining and support banquet service.
Maintain a regular cleaning and maintenance schedule for all equipment, submitting service and repair requests as needed.
Attend department meetings as necessary and partner with front‑of‑house staff to achieve departmental goals.
Perform other duties as assigned.
Qualifications
Minimum of 7 years of related experience.
Minimum of 2 years of experience in kitchen management.
Minimum of 5 years of experience in food preparation.
Must obtain ServSafe Allergen, ServSafe Manager, and RAMP certifications after employment.
Completion of high school or GED.
Valid driver’s license required.
Knowledge, Skills, and Abilities
Strong knowledge and experience in upscale casual or club dining restaurants.
Ability to convey information, work within strict deadlines, multi‑task, and respond quickly and effectively to challenges.
Ability to lead a team of employees with proven organizational and communication skills.
Job Demands
Reach forward frequently; lift occasionally up to 50 lbs.
Hand/eye coordination frequent; standing constant; walking frequently.
Good personal hygiene required.
Exposure to extreme heat (>100°F) or cold ( Variable schedule with weekends and holidays required.
