$80,000-82,000 Other Forms of Compensation:
annual bonus 15% target Chartwells Higher Education is seeking an innovative Campus Executive Chef to join our food service team on a beautiful university campus in Eastern Texas. You will oversee kitchen operations, ensure safety and sanitary standards, and direct meal preparation in accordance with Chartwells programs and guidelines. This is an energetic, entrepreneurial culinary leadership role. Relocation Assistance:

Key Responsibilities
Plan regular and modified menus according to established guidelines Follow standardized recipes, portioning and presentation standards; complete daily production worksheets and waste logs; taste meals to ensure quality Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation per Chartwells guidelines and regulatory standards Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas; ensure adherence by kitchen staff Maintain inventory of food and non-food supplies within established guidelines; ensure product availability as needed Make decisions regarding utilization of leftover food within company guidelines Comply with federal, state and local health and sanitation regulations and audit standards Follow facility, department, and company safety policies and procedures, including incident reporting Participate in departmental meetings, staff development, and professional programs as appropriate
Preferred Qualifications
College/University Dining preferred Contract food service experience A.S. Culinary degree or equivalent experience Minimum of three to five years of progressive culinary/kitchen management experience Extensive catering experience a plus High-volume, complex foodservice operations experience Institutional and batch cooking experience Hands-on executive chef experience required Knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation Proficiency with computers (Word, Excel, PowerPoint, Outlook, Internet) ServSafe certification (highly desirable)
