Responsibilities The Sous Chef assists the Food & Beverage Director with meal/menu planning, supervises kitchen staff, maintains a well‑stocked kitchen, and prepares high‑quality meals that meet or exceed hospitality and service standards of the community. The Sous Chef ensures the kitchen and food stations are clean/sanitized and that all meals meet dietary needs and food safety guidelines.
Prepares all foods for breakfast, lunch, and dinner according to menu and recipes.
Maintains recipes, prep, service and storage sanitation principles.
Prepares foods during the preparation process in accordance with production forecasts.
Suggests menu or recipe changes to reduce waste.
Ensures portioning and serving of foods as indicated.
Maintains high standards of appearance, cleanliness, hygiene, and health.
Follows all local, state, and federal food‑handling policies.
Communicates with wait staff, Dining Room Manager, and Chef to ensure resident satisfaction.
Supports Masterpiece® initiatives (feedback groups, new initiatives).
Dependable and punctual; meets scheduling requirements.
Interacts with guests, residents, and staff courteously.
Supports organizational goals and values, balances team responsibilities.
Responds promptly to resident needs.
Complies with OSHA in the workplace.
Can cover kitchen management in absence of the Food & Beverage Director.
Other duties as assigned by the Supervisor.
Qualifications
High school diploma or equivalent.
Two (2) years of related experience and/or training in food production.
Previous fine‑dining experience preferred.
Effective written and oral communication in the primary language of residents.
Ability to read and interpret safety rules, operating instructions, and procedure manuals.
Basic arithmetic skills in all units of measure.
Ability to apply common sense to simple step instructions.
Basic computer skills preferred.
Demonstrated interest in working with a senior population.
Miscellaneous
MAY have their picture taken and used in community advertising.
MAY be video recorded from devices in residents’ apartments.
Required to work weekends and holidays as assigned.
May be required to work other shifts or extended hours up to 16 hours per day.
Possibly exposed to infectious waste, diseases, conditions, etc., including HIV, AIDS, and Hepatitis B & C.
May be exposed to wet/humid conditions, mechanical parts, fumes, extreme cold or heat.
Could encounter hostile or emotionally upset residents due to mental status.
Background, criminal, and drug tests may be required; random drug testing possible.
Appropriate dress required; uniforms must be neat, clean, wrinkle‑free.
Works primarily indoors.
Possible exposure to high heat and cold temperatures, unpleasant odors, chemicals (MSDS).
