The Senior Overnight Bakery Manager is responsible for leading all overnight production, logistics, and sanitation within Tatte’s state‑of‑the‑art bakery facility. This senior role ensures that every product meets Tatte’s uncompromising standards of quality, craftsmanship, and consistency while driving operational excellence across production lines. As a key member of the Bakery Leadership Team, this person oversees a large overnight workforce, coordinates cross‑functional scheduling and logistics, and ensures all safety and regulatory requirements are met. The Senior Overnight Bakery Manager is also responsible for developing future bakery leaders and continuously improving systems, efficiency, and communication across teams.
Summary of Responsibilities
Lead all overnight production operations to ensure output meets Tatte’s quality, consistency, & volume targets.
Drive operational excellence in proofing, baking, finishing, packaging, and dispatch to cafés and catering.
Partner with the Bakery GM, Logistics Manager, and Production Leads to align staffing, labor forecasting, and production schedules.
Oversee overnight team performance, including coaching, development, and accountability.
Develop and implement standard operating procedures for production, sanitation, and safety, ensuring full compliance with Tatte, state, and federal standards.
Collaborate with the Culinary and Product Development teams to ensure new products are successfully integrated into production without compromising efficiency or quality.
Monitor and report on key production metrics (e.g., yield, waste, efficiency, labor utilization, downtime).
Manage overnight facility operations, ensuring equipment maintenance, cleanroom standards, and food safety compliance.
Foster a positive, high‑performance culture rooted in craftsmanship, teamwork, and continuous improvement.
Serve as the senior leader on‑site overnight, ensuring clear communication with day teams and leadership.
Requirements & Experience
7+ years of experience in bakery manufacturing or large‑scale food production, with at least 3 years in leadership.
Proven success managing high‑volume, multi‑line bakery operations or similar environment.
Strong command of production planning, scheduling, and quality control systems.
Knowledge of Good Manufacturing Practices (GMP), food safety, & regulatory standards (HACCP, OSHA, FDA).
Experience managing, training, and developing teams of 40+ employees preferred.
Bilingual in English and Spanish strongly preferred.
Must be able to lift 50 lbs, stand for 10 hours, and work overnight (including weekends/holidays as neededn Valid driver’s license: ability to operate bakery delivery trucks as needed (no CDL required).
Must be available to work overnight shifts during the week and weekend, and holidays (as needed)
Competitive pay (starting at $95,000k/year and goes up - depending on experience, bonus eligibility up to 10%)
