Hotel del Coronado is an iconic 28‑acre Victorian beach resort that recently completed a $400M renovation. With 750 rooms, cottages, and villas, 65,000 square feet of banquet space, and 10 food and beverage outlets, the property offers a dynamic culinary environment. The Executive Sous Chef will oversee operations in all restaurant outlets and banquet operations, managing 10 managers and reporting to the Executive Chef.

Responsibilities

Assist the Executive Chef in directing and overseeing all culinary operations, including preparation, production, and presentation of hotel meals.

Ensure compliance with food safety, sanitation, and alcohol regulations.

Conduct team member performance management: supervision, counseling, training, scheduling, and recognition.

Interact with guests and clients to monitor satisfaction, address issues, and implement improvements.

Develop and implement menu selections for special banquet themes and events in partnership with the Executive Chef and Director of Food & Beverage.

Maintain cost controls and contribute to overall profitability.

Qualifications

Strong banquet experience and proven track record in menu development and recipe R&D.

Experience leading and developing kitchen teams.

Pay Rate The annual salary range for this role is $120,000–$140,000, based on applicable and specialized experience and location.
