Overview
The Purchasing Manager oversees all procurement activities for the resort, ensuring cost-effective, timely, and compliant purchasing across multiple departments, with a primary focus on Food & Beverage operations. This role partners closely with leadership across F&B, Rooms, Engineering, Housekeeping, Events, and Finance to support a high-volume, multi-outlet resort environment. Lead purchasing for one of San Diego’s premier resort and convention destinations and influence cost strategy across a diverse, multi-concept operation. Pay Range $70,000.00 - $75,000.00 #towncountrySD
Responsibilities
Lead purchasing for
all resort departments , including Food & Beverage, Rooms, Housekeeping, Engineering, Banquets, Events, and Administration
Develop and maintain standardized purchasing procedures, approval workflows, and vendor partnerships
Forecast purchasing needs based on business volume, seasonal trends, and convention activity
Food & Beverage (Primary Focus)
Manage procurement of
all food, beverage, and alcohol inventory
for restaurants, bars, banquets, and special events
Partner with Executive Chef, Beverage Director, Outlet Leaders, and Banquet Leadership to support menu development, promotions, and events
Analyze usage trends, par levels, and demand to ensure product availability while minimizing waste and shrink
Maintain compliance with all federal, state, and local regulations related to alcohol purchasing, storage, and distribution
Vendor Management & Negotiation
Establish and maintain strong relationships with distributors, manufacturers, and service providers
Negotiate pricing, contracts, rebates, and delivery terms to maximize value and service levels
Evaluate and onboard new vendors in alignment with resort standards and operational needs
Cost Control & Financial Accountability
Monitor market conditions, pricing fluctuations, and cost trends across all categories
Prepare and analyze purchasing reports, inventory levels, and cost variance metrics
Support annual budgeting, forecasting, and cost-saving initiatives
Collaboration & Systems
Partner closely with Finance and Accounting to ensure accurate receiving, invoice processing, and inventory reconciliation
Maintain purchasing and inventory systems, ensuring data accuracy and process efficiency
Support audits and ensure adherence to internal controls and company policies
Qualifications
5+ years of purchasing or procurement experience in a large hotel, resort, or convention environment
Strong background in Food & Beverage purchasing, including alcohol procurement
Experience supporting multi-department operations in a fast-paced setting
Proven negotiation and vendor management skills
Strong analytical, organizational, and communication abilities
Proficiency with purchasing, inventory, and ERP systems
Physical Demands
Ability to
sit, stand, and walk for extended periods
throughout the workday
Ability to
frequently move throughout the resort , including kitchens, storage areas, loading docks, bars, and event spaces
Ability to
lift, carry, push, or pull up to 40 pounds , including cases of product, samples, or office supplies
Frequent
bending, reaching, crouching, and twisting
when inspecting inventory or storage areas
Manual dexterity to operate computers, phones, scanners, and inventory systems
Visual ability to review invoices, contracts, inventory reports, and data on screens and in print
Ability to work in
variable environments , including offices, warehouses, walk-in coolers, and loading dock areas
Ability to work
extended or flexible hours
during peak seasons, large events, or operational needs
