Primary Purpose
Supervise and coordinate night shift operations in the
evisceration department , ensuring production goals are met while maintaining alignment of people, processes, and resources. This role is critical in overseeing bird processing, ensuring compliance with
food safety, quality, and USDA regulations , and supporting a safe, efficient work environment. Major Duties & Responsibilities
Staffing & Scheduling : Ensure correct staffing levels nightly to meet production demand and maintain efficient workflow. Operational Oversight : Direct evisceration line operations, ensuring SOPs and Good Production Practices (GPPs) are consistently followed. Food Safety & Quality : Monitor product quality and compliance with USDA guidelines and HACCP principles; implement corrective actions when deviations occur. Performance Metrics : Achieve and exceed department KPIs including BMPH, Cost/lb., PPMH, and A Grade %. Compliance & Training : Enforce HR and Safety policies, manage Kronos and Oracle HCM requests, and ensure timely completion of safety certifications. Continuous Improvement : Collaborate with operations and maintenance teams to improve efficiency, reduce downtime, and strengthen safety practices in evisceration. Qualifications
High School Diploma or equivalent required; Bachelor’s degree in Agriculture, Operations Management, or Business preferred. 3+ years of supervisory experience (poultry or food manufacturing strongly preferred). Knowledge of USDA regulations, HACCP principles, and food safety standards. Strong leadership, communication, and problem‑solving skills.
