Campus Dietitian - 251077 Department: Catamount Dining, Campus: Western Carolina University, location: Cullowhee, NC. Employment type: Permanent Full-Time.

Position Summary: This on‑site position serves as the campus dietitian, supervised by the Director of Food and Beverage Services, overseeing third‑party food service and beverage providers while addressing students’ nutrition needs, quality assurance, and sustainability initiatives.

Primary Responsibilities

Develop and execute initiatives to meet students’ and customers’ dietary needs and expectations.

Support health and wellness platforms and implement nutrition and sustainability programs such as tabling events, food samplings, cooking demos, lunch and learns, health fairs, guest speaker events, and other on‑campus programming.

Collaborate with WCU Athletics to meet fueling and nutrition education needs of student athletes.

Work with the third‑party contracted Marketing Manager to engage students through social media and pop‑up events.

Assist meal plan sales by helping students choose the appropriate plan in coordination with the Aux Enterprises Marketing Manager.

Support peer‑to‑peer programming and student interns; may serve as preceptor for dietetic interns.

Ensure operational standards and performance of contractors.

Stay current on dining, nutrition, and sustainability practices and apply learning as needed.

Ensure third‑party partners meet food, safety, and sanitation commitments.

Advise on the Meal Plan Policy accommodation process.

Maintain relationships with student groups (SGA, SAND Club) to gather and share feedback.

Collaborate with campus organizations on event planning; act as liaison between dining services and community partners; may serve on advisory boards and develop SOPs.

Monitor relevant annual KPIs and use data for decision making.

Minimum Qualifications

Legally eligible to work in the United States without employer sponsorship.

Bachelor’s degree in nutrition and dietetics from an ACEND accredited 4‑year university.

Registered Dietitian Nutritionist credential and Licensed Dietitian/Nutritionist status.

ServSafe certification obtained within 6 weeks of hire.

AllerTrain certification obtained within 6 weeks of hire.

Preferred Qualifications

Master’s degree in nutrition, dietetics, or related field.

3+ years of food and nutrition service management experience, preferably higher education.

Knowledge of sustainability programs and health code standards.

Passion for sustainability and experience with menu design, waste management, and best practices.

Experience with contract negotiation and management, and retail brand partnerships.
