As a Pastry Sous Chef (PM production), you have a unique opportunity to play a vital role in our operations, assisting in the production of our full menu – savory, pastry, and breads – as well as to maintain, shape, and run the café and bakery.
Key Responsibilities
Oversee and assist chef in managing the day-to-day operations of the bakery/pastry evening production team, including workflow, scheduling, staffing, and training to ensure efficient and effective kitchen operations
While lead for the pastry team, the Pastry Sous Chef would also provide supportive leadership to oversee, supervise, provide guidance, coaching, and training to ensure proper technique, efficiency, and culture with BOH and FOH staff and reinforce standards for quality and excellence.
Lead and inspire the pastry team by providing guidance, training, and motivation
Coordinate and delegate tasks, prep lists, and pars among pastry staff to ensure smooth operations
Maintain high standards of quality and consistency in pastry production, including taste, texture, appearance, and portion size through regular tastings, evaluations, and quality checks and implementing corrective measures, as needed
Collaborate with Chef in developing recipes, new menu items, and seasonal specials that showcase innovation, creativity, and culinary excellence
Ensure recipes are accurately followed and continually updated – recipe data input
Assist with ordering, receiving deliveries, and inventory management, including monitoring stock levels, controlling costs, and ensuring freshness
Assist in controlling costs by effective purchasing of food, maintaining food cost goals, preventing waste and maximizing use of raw materials, and monitoring labor levels
Maintain a clean, organized, and safe work environment – follow all safety and sanitation protocols
Maintain effective communication with morning pastry team and collaborate effectively with other staff members, assisting as needed, and learning diverse skills
Maintain mindful, positive, and detail-oriented hospitality with guests
Catering/Event Coordination
Oversee cash drawer, as needed
What We’re Looking For
2+ years of pastry specific experience, a focus on laminated doughs an asset
A reliable, organized, and natural leader who thrives in teamwork
Must be a source of positivity, curious, creative, willing to learn, and ask questions
Must be self-motivated and able to lead, train, and oversee the pastry team
Maintain the highest of standards of food quality, presentation, sanitation, and safety
Strong problem-solving skills, resourcefulness, and sound judgment
Excellent work ethic, attention to detail, and openness to feedback
Must be a team collaborator, have strong interpersonal and communication skills, and the ability to contribute to create a culture and work environment based on respect and support
Ability to stand for extended periods, lift heavy objects (up to 50 lbs), and work in a fast-paced environment
