Sous Chef - RPM Italian – Las Vegas, NV
RPM Italian is a modern Italian restaurant showcasing housemade pastas, fresh seafood and celebrated Italian classics in a chic downtown setting. We are part of Lettuce Entertain You Restaurants and are hiring a Sous Chef with 2-3 years of sous‑chef experience.
Job Summary As a Sous Chef, you will run back‑of‑house (BOH) shifts, oversee food preparation and cooking, maintain inventory, manage kitchen staff, and collaborate with the General Manager to ensure quality and efficiency.
Responsibilities
Run BOH shifts, ensuring effective operations, food prep, and cooking.
Maintain adequate inventory levels of food and supplies.
Supervise kitchen, dish, and other BOH teams.
Lead BOH pre‑shift meetings and participate in line, temp and cooler checks.
Conduct line checks throughout the day to ensure quality of menu items.
Purchase and order food products and supplies, including daily orders.
Track and control food cost.
Communicate food production and timing issues between FOH and BOH.
Interview, hire, onboard, train, supervise, and develop BOH employees.
Model and promote teamwork across all teams.
Handle challenges involving guests, vendors, and employees with patience and courtesy.
Work a variety of days and shifts (including early mornings, late nights and weekends) and be available for travel as needed.
Perform physical tasks such as moving or lifting items up to 50 pounds.
Qualifications
2‑3 years of sous‑chef experience in a full‑service restaurant.
Ability to lead and manage kitchen staff.
Strong leadership, communication, and organizational skills.
