Job Brief We are seeking a talented and experienced Chef de Cuisine to lead our culinary team at Yamashiro Hollywood. As a Chef de Cuisine, you will be responsible for overseeing all aspects of our kitchen operations, including menu development, food preparation, staff management, and ensuring a high standard of culinary excellence. Your creativity, leadership skills, and passion for culinary arts will play a crucial role in maintaining our reputation as a premier dining establishment.

Responsibilities

Lead and manage the kitchen team, including chefs, cooks, and kitchen staff, ensuring effective coordination and collaboration.

Oversee menu planning and development, taking into account customer preferences, seasonal ingredients, and culinary trends.

Create and refine recipes, ensuring consistent quality, taste, and presentation of dishes.

Supervise food preparation, including proper cooking techniques, portion control, and plating aesthetics.

Ensure compliance with food safety and sanitation regulations, conducting regular inspections and training to maintain high standards.

Monitor inventory levels and manage food costing, optimizing resources while minimizing waste and maintaining profitability.

Foster a positive and productive work environment, providing guidance, coaching, and professional development opportunities to team members.

Collaborate with suppliers and vendors to source the highest quality ingredients and establish strong relationships.

Stay updated on emerging culinary trends, techniques, and industry best practices, implementing innovative ideas into the menu offerings.

Maintain effective communication with front-of-house staff to ensure smooth service and excellent customer satisfaction.

Skills Required

Proven experience as a Chef de Cuisine or in a similar leadership role within a high-end restaurant or culinary establishment.

Extensive culinary knowledge and expertise, with a deep understanding of various cuisines, ingredients, and cooking techniques.

Strong leadership and management skills, with the ability to inspire and motivate a team of culinary professionals.

Excellent organizational and time management skills, with the ability to prioritize tasks and manage multiple projects simultaneously.

Creativity and innovation in menu development, with a passion for creating unique and memorable dining experiences.

In-depth knowledge of food safety and sanitation regulations, as well as a commitment to maintaining a clean and hygienic kitchen environment.

Effective communication and interpersonal skills to collaborate with team members, suppliers, and front-of-house staff.

Culinary degree or equivalent certification from a reputable culinary institute is preferred.
