Cook II – Job Summary The Cook II is a mid-level culinary position responsible for independently managing assigned stations with consistency and quality. This role executes prep, production, and service across multiple areas, including line cooking and banquets, while maintaining food safety and presentation standards.
The Cook II assists in training Cook III team members and supports the overall flow of the kitchen during high-volume service. This position requires strong technical skills, efficiency, and adaptability.
Responsibilities Cook II (Mid-Level / Independent)
Competent line cook who can run a station unsupervised, with consistent quality.
Core Skills & Knowledge
Proficiency in multiple stations (Garde Manger, sauté, grill, banquets, breakfast).
Solid knife skills and ability to execute mise en place efficiently.
Demonstrates consistency in portioning, presentation, and timing.
Knowledge of safe food handling, ServSafe certification preferred.
Can read and interpret BEOs (Banquet Event Orders) and production sheets.
Ability to handle moderate to high-volume service independently.
Takes accountability for station cleanliness and organization.
Prepare and cook menu items in accordance with recipes and quality standards.
Set up and stock stations with all necessary supplies.
Ensure freshness and quality of ingredients before cooking.
Maintain a clean and organized workstation, adhering to food safety standards and sanitation regulations.
Collaborate with kitchen team members to ensure timely and efficient service.
Monitor food inventory and communicate shortages or discrepancies to the appropriate personnel.
Follow proper portion control and presentation techniques.
Assist in the development of new menu items and specials.
Soft/Professional Skills
Works with minimal supervision; self-motivated.
Assists in training Cook III and dish staff.
Communicates effectively with supervisors, peers, and FOH staff.
Adaptable to last-minute menu changes and special requests.
Skills Required
Provide high-level customer service, communicate effectively with guests and team members, follow instructions, ability to learn quickly, pay attention to detail, and maintain composure when working under pressure
Technical Skills
Safe and appropriate use and operation of kitchen equipment
Knife skills, grill, broiler, sauté and Expediter skills; garde manger experience
Speed in meal production while ensuring high-quality food
Experience / Education
Minimum 2 years’ experience; high school diploma and/or equivalent work experience; experience with receiving orders and inventory control helpful; Culinary Arts education preferred; Serve-Safe Certification and Allergy Awareness Training preferred
