Job Scope Summary
Supervise and coordinate activities of cooks.
Order and maintain inventory of food and supplies needed to ensure efficient operations.
Hire, train, and supervise cooks and other food preparation workers.
Monitor sanitation practices and ensure that kitchen safety standards are followed.
Duties & Responsibilities
Assist superiors in organising, planning, directing, and controlling the Kitchen Department and its team members, and organising workloads and assignments.
Ensure all departmental activities are performed according to hotel standards and procedures, and assist team members as needed.
Assist the Executive Chef in designing menus (including special menus) and standardising recipes for all food service locations, considering customer base, dish popularity, costs, and other factors.
Consult with catering team members regarding food production aspects of planned special events.
Assist the Executive Chef in continuously updating all menus, paying special attention to seasonal availability.
Develop and test recipes and techniques for food preparation and presentation to ensure consistent top quality and food cost control, exercising portion control over all served items.
Directly supervise the cooking of items that require skilful preparation.
Ensure stocks are ordered to the correct quantities, quality, and price.
Ensure all stocks are stored securely and under correct conditions for each commodity.
Execute regular spot checks on stock, portion control, presentation, flavour of foods, etc., establishing controls to minimise waste and theft.
Evaluate food products to consistently achieve quality standards.
Candidate Selection Criteria
Qualifications: NTC 3 cooking
Experience: 3–5 years experience
