Overview CHICA at The Venetian in Las Vegas, opened in 2017 and delivers the robust and vibrant flavors of Latin cuisine with a dynamic wine and mixology program. The restaurant's menu was crafted by featured chef Lorena Garcia and draws inspiration from classic renditions of Latin dishes from Venezuela, Peru, Brazil, Mexico and Argentina, among others. CHICA is open daily for breakfast, lunch, dinner and weekend brunch.

Sous Chef

Responsibilities

Provide excellent food quality, consistency, value, and professional service in an attractive environment.

Manage culinary functions to meet food quality goals, financial goals, facilities maintenance, and personnel development objectives.

Assist in maintaining standard of excellence and communicate standards to staff.

Participate in service education through daily line-ups, quarterly menu meetings, and new server training programs.

Train kitchen staff to produce meals promptly; strive to execute all tickets in twenty minutes or less.

Meet financial targets while achieving food quality and service objectives; identify and escalate any barriers to the General Manager as needed.

Maintain a high level of cleanliness in kitchen facilities and supervise daily cleaning of pantry, cooking line, prep areas, dish area, stairs, and walk-in.

Supervise kitchen employees; assist the General Manager in direction, coordination, and evaluation of the unit; interview, hire, train, and develop staff.

Qualifications

Degree in Culinary Arts

Food Safety/Manager Certification

Customer-focused approach with expertise in food product, presentation, quality and preparation, including menu concept and design

Ability to read and interpret safety rules and operating instructions; ability to write routine reports, purchase orders, menus, and correspondence

Strong communication skills; ability to speak and write in English

Ability to work flexible hours, including weekends and holidays; professional appearance and demeanor

Ability to add, subtract, multiply, and divide in all units of measure; ability to solve problems and adapt to varied situations

Work Conditions

The work environment is usually loud; standing, bending, walking, using hands, talking, hearing, seeing, and reaching are required.

Ability to lift up to 50 pounds as needed.

Supervisory Responsibilities

Assists the General Manager in supervising all kitchen employees; responsible for overall direction, coordination, and evaluation of this unit.

Responsible for interviewing, hiring, training, and disciplining employees; planning, assigning, and directing work; and appraising performance.
