Job Responsibilities And Requirements
Ensure proper set‑up of all concession locations prior to doors opening, verify opening inventory, assign duties to concession workers (employee/volunteer), ensure sanitation standards are met, verify each location is fully operational, ascertain levels of food production have been met based upon projected guest attendance; assure stand supervisors have followed proper procedures for distribution and handling of cash.
Cover any open position to assure location is fully operational and company standards pertaining to speed of service and guest satisfaction are met.
Assist with premium services operations and event needs as directed by the Concessions Director or Sr. Vice President.
Provide direction and oversight to supervisors and hourly employees ensuring that all venue policies, procedures and practices are adhered to, including compliance with alcohol service and food handling/sanitation guidelines, general safety policies and procedures.
Assist with post‑event evaluation, data compilation, tracking of monetary and product shortages, generating reports; serve as a resource for POS applications, training and hardware problems.
Ensure work environment is safe and free from harassment or discrimination; immediately address all safety concerns, potential hazards, accidents or incidents.
Ensure event staff and volunteers are aware of workplace expectations; provide ongoing assistance, training and mentoring to event staff and volunteers; work side‑by‑side with staff and volunteers; reinforce procedures and practices through repetition.
Lead by example and provide ongoing constructive feedback.
In the Director’s absence, provide the same high level of oversight and operational expertise resulting in the smooth, efficient and profitable execution of events, assist with the management and running of all venue concession operations before, during and after the event, staff scheduling, employee check‑in, equipment inspection, POS monitoring and troubleshooting, vault duties, guest complaint resolution, training, food production, clean‑up, post‑event reconciliation and reporting, and any other duties normally handled by the Director of Concessions.
Assist in other food and beverage departments as needed.
Other duties as assigned.
Additional Job Requirements
High School Diploma or equivalent preferred.
Minimum 2 years food service/hospitality experience; similar venue experience a plus.
Valid liquor license/alcohol service permit and food handling certificate if required by state and federal regulations.
Experience working in a supervisory capacity in a fast‑paced restaurant.
Make sound business/operations decisions quickly and under pressure (e.g., employee placement, staffing adjustments and/or responding to technical, product or equipment challenges during an event).
Solid knowledge of computer applications: Microsoft Office, POS systems, time‑keeping systems.
Possess a thorough working knowledge of all existing concession locations: geographical location, equipment, evacuation procedures, adjacent employee and guest areas and facility access.
Thorough working knowledge of all applicable sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc., pertaining to Oklahoma State Fair, Inc. and venue concession operations.
Handle cash accurately and responsibly.
Basic math skills (addition, subtraction, multiplication, division, percentages) as they relate to POS/Micros cash/credit transactions, cash reconciliation and product inventory.
Ability to consistently adhere to the highest standards of integrity, professionalism, ethics and confidentiality.

Physical Requirements And Working Conditions
Extended hours, nights and weekends may be required during peak periods.
Frequent or continual movement from place to place with normal physical mobility, covering long distances with ease, managing assigned tasks throughout various indoor and outdoor locations within and around the property and in potentially inclement/severe weather conditions.
Regularly lift, carry and put away items weighing up to 50 lbs. and occasionally lift and carry heavier items and/or assist others in lifting heavier objects as job demands.
Walk and/or stand for extended periods in addition to other prolonged physical exertions including seeing, hearing, reaching, grasping, lifting, pushing, pulling, squatting, crouching, stooping, bending, kneeling, climbing and working in awkward positions and tight areas may be required.
Possible job hazards include, but are not limited to, slips, trips, falls, burns, cuts and strains.
