Job Title: Breakfast Line Cook
Department: Food & Beverage / Kitchen
Reports To: Executive Chef / Sous Chef / Kitchen Manager
Job Summary: The Breakfast Line Cook is responsible for the timely and efficient preparation of all breakfast food items according to established recipes, quality standards, and food safety regulations. This role ensures that all dishes are prepared to the highest culinary standards, contributing to a memorable dining experience for our guests. The ideal candidate will be a morning person, organized, detail-oriented, experienced in cooking eggs, and able to work effectively in a fast-paced environment.
Key Responsibilities:

  • Food Preparation:
    1. Prepare and cook a variety of breakfast items, including eggs (various styles), bacon, sausage, pancakes, waffles, oatmeal, potatoes, and other hot and cold breakfast offerings, following standardized recipes and portion control guidelines.
    2. Execute mise en place duties, including chopping vegetables, preparing sauces, and portioning ingredients, to ensure efficient service.
    3. Monitor food quality and freshness throughout the shift.
  • Line Operations:
    1. Set up and stock the breakfast line with all necessary food items, equipment, and supplies before service begins.
    2. Maintain a clean, organized, and sanitary work area at all times, including equipment, counters, and floors.
    3. Manage multiple orders simultaneously and ensure timely delivery of food to the breakfast buffet or for individual guest orders.
    4. Communicate effectively with front-of-house staff regarding food availability, special requests, and potential delays.
  • Quality Control & Food Safety:
    1. Adhere strictly to all food safety and sanitation guidelines (HACCP, local health codes) to prevent cross-contamination and ensure foodborne illness prevention.
    2. Monitor and record food temperatures to ensure proper cooking and holding.
    3. Minimize waste through proper food handling and inventory management.
    4. Report any equipment malfunctions or maintenance needs to the supervisor promptly.
  • Teamwork & Communication:
    1. Collaborate effectively with other kitchen staff, including dishwashers and other cooks, to ensure smooth kitchen operations.
    2. Take direction from the Executive Chef, Sous Chef, or Kitchen Manager and provide feedback as needed.
    3. Maintain a positive and professional attitude in a high-pressure environment.
  • Other Duties:
    1. Assist with inventory rotation and storage of food supplies as needed.
    2. Participate in daily kitchen cleaning tasks.
    3. Perform other duties as assigned by management.

Qualifications:
  • Experience:
    1. Minimum of 2 years of experience as a breakfast line cook, preferably in a hotel, restaurant setting.
    2. Proven experience with breakfast specific cooking techniques (e.g., various egg preparations).
  • Skills:
    1. Strong understanding of cooking methods, ingredients, and kitchen equipment.
    2. Ability to work efficiently and accurately in a fast-paced, high-volume environment.
    3. Knowledge of food safety and sanitation regulations (e.g., ServSafe certification preferred).
    4. Excellent communication and interpersonal skills.
    5. Ability to follow recipes and instructions precisely.
    6. Strong attention to detail and commitment to quality.
  • Physical Requirements:
    1. Ability to stand for extended periods (e.g., 6-8 hours).
    2. Ability to lift, carry, push, and pull up to 50 pounds regularly.
    3. Ability to bend, stoop, reach, and twist frequently.
    4. Must be able to work in a hot and humid environment.
  • Material/Equipment Used:
    1. Chemicals/Agents: grease strip, bleach, grease cutter, Lime Away.
    2. Protective Clothing: hair restraint/hat, gloves, apron, safety shoes - approximately 100% of 8-hour shift.
    3. Deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill.
  • Availability:
    1. Must be available to work early mornings, weekends, and holidays as required.
Education:
  • High school diploma or equivalent required. Culinary degree or relevant culinary training is a plus.
