The

Pastry Cook

will be responsible for planning, prepping, setting up, and providing quality service in all areas of food production for menu items and specials in the designated outlets, in accordance with standards, recipes, and plating guide specifications. They will maintain organization, cleanliness, and sanitation of work areas and equipment, in addition to preparing menu items at their assigned station, ensuring food quality that meets the high standards expected of the club. May be assigned to Restaurant kitchen (AM or PM). Principal (Essential) Duties

Responsible for the preparation, cooking, and presentation of dishes from assigned station. Communicates frequently with the Executive Chef and Sous Chef regarding orders and progress on orders. Controls and properly stores incoming ingredients. Ensures all dishes are properly prepared according to recipes, food temperature, sanitation, and presentation standards. Enforces strict health and hygiene standards in the assigned station and strictly abides by state sanitation/health regulations and club requirements. Reports to work at the scheduled time, neatly groomed, and in the correct uniform; attends daily briefings, meetings, and training as required. Makes sure the kitchen is properly closed and completes the closing tasks, checking out with the Executive Chef and Sous Chef before leaving. Maintains complete knowledge of correct maintenance and use of equipment; uses equipment and tools only as intended, properly, and safely. Maintains complete knowledge of and complies with all departmental/club policies and procedures. Meets with the Executive Chef or Sous Chef to review assignments, anticipated business levels, changes, and other pertinent information. Completes opening duties, including turning on specified equipment, setting up workstation with required mise en place, tools, equipment, and supplies, inspecting cleanliness and condition of tools and equipment, checking production schedule and pars, and establishing priorities. Informs the Executive Chef/Sous Chef of any supplies that need to be requisitioned for the day's tasks. Inspects the cleanliness and organization of the line and workstations; rectifies deficiencies and maintains throughout the shift. Prepares, bakes, and finishes breads, cookies, and other specified baked goods according to departmental standards. Organizes all prep items needed from different areas to ensure readiness for service. Minimizes waste and maintains controls to attain forecasted food cost. Qualifications & Experience

Certification of culinary training or apprenticeship, or at least 2 years’ experience as a pastry cook in a luxury establishment. Proven pastry & bread experience, including in a similar position. Ability to communicate satisfactorily in job-related English. Ability to perform basic mathematical calculations. Ability to provide legible communication. Ability to work varied shifts and a flexible schedule in a hot, humid, and noisy environment. Why Join Us
