Qualifications Any combination of training and work experience which indicates possession of the knowledge, skills, and abilities listed below. An example of an acceptable qualification for this position:

Completion of secondary education (high school or GED)

Three (3) to five (5) years experience in the food service industry, majority in a long-term care setting

Progressive level of responsibility including supervision and direction of others

Demonstrated experience and knowledge of cooking, menu planning and ordering

Willingness to care for older adults and dedication to an organization which provides such care

Must be able to read, write, speak, and understand the English language

ServSafe certification (must be completed and maintained)

Certified Food Service Manager (CFSM) preferred

Must maintain a valid State of Ohio driver’s license and insurability as required by employer policy

Essential Functions / Responsibilities

Under general direction of the Director, responsible for overall food quality at Maple Crest; coordinates the food service program including active participation in preparation and service of meals served to elders; supervises cooks and dietary aides; interviews and effectively recommends hiring; schedules; assigns and reviews work; provides work instruction and training on operation, cleaning, and maintenance of department equipment; ensures safety and quality standards; manages discipline as necessary; evaluates employee performance; handles complaints and grievances; approves leave requests; coordinates elder involvement in kitchen and dining room activities.

Plans, directs, and manages operations of the food service department; participates in budgeting for food service; monitors food costs to stay within budget; supervises and/or completes preparation of orders and receipts of food and paper goods; maintains an orderly, sanitary stock room with inventory control; implements proper menus for elder meals (e.g., therapeutic and normal diets) in conjunction with the dietary technician; maintains records; works with the Registered Dietitian and interdisciplinary care team to support nutritional status; develops menus, prep lists, recipes, and menu cards; uses sanitation checklists, Ohio Sanitary Code, equipment manuals, and related documentation to maintain high safety, cleanliness, and sanitation standards.

Ensures proper functioning of dietary department equipment; ensures all menu items have complete recipes on file; maintains current department information (recipe files, census lists, diet cards, nutritional requirements); participates in Quality Assurance; provides in-service training; keeps abreast of local, state and federal regulations including the Ohio Uniform Food Code and related standards.

Implements programs to ensure nutritional integrity, elder satisfaction and quality of life; participates in special event planning for elders; leads the elder Food Committee; solicits feedback, implements changes as feasible; codes billing to appropriate accounts in an accurate and timely manner.

Attends care conferences and collaborates with the dietary technician and Registered Dietitian; follows up on elder likes/dislikes and preferences with elders and families as appropriate; attends meetings, conferences and seminars as assigned; participates in events as assigned.

Demonstrates regular and predictable attendance.

Maintains all required licensure and certifications; attends continuing education programs to stay informed of current trends in gerontology and nutrition.

Meets all job safety requirements and OSHA standards; serves as a role model in policy implementation and universal precautions; ensures staff compliance and retraining as needed.

Maintains confidentiality as appropriate under employer policy and laws.

Complies with Corporate Compliance Policies and Code of Ethics.

Participates in professional customer relations and maintains appropriate behavior and attire.

Performs other related duties as assigned to promote the caring, efficient operation of Mennonite Home Communities of Ohio facilities.
