Food Service Operations Directors . This position is not local. You will be living on-site for the term of the contract. This is a hands-on and demanding position. All lead staff will live on site at the job location; room, board, and travel expense assistance are provided. The role requires the ability to flawlessly execute the Wolfoods Camp Food Service Program, knowledge of food allergens, and the ability to create dishes for individuals with various dietary restrictions. You must be able to plan, execute recipes, maintain strict sanitation to prevent cross-contamination, and manage the Service & Culinary needs of the assigned camp. You will maintain clean and comfortable surroundings in a fast-paced environment, ensuring correct service timing, quantity, and quality for all meals and special requests. You will communicate professionally with children, exchange students, staff, directors, managers, counselors, leaders, specialists, and diners. A keen sense of urgency is required, and you must answer all Service & Culinary questions according to Wolfoods Standards of Service Guidelines.
The lead staff will manage all aspects of the food service operation to deliver high levels of camp diner satisfaction, comply with camp standards, control the budget, and train staff on service standards. You will be the primary contact liaison between the camp and the kitchen, attend relevant meetings and events, manage payroll, handle special requests, and address concerns from camp leadership. This job requires initiative, leadership, hands-on self-reliance, and sound judgment. Duties & Responsibilities
Provide excellent guest service in an efficient manner Develop effective staff schedules based on business level and budgetary guidelines Schedule and coordinate all side work for personnel Maintain cleanliness and organization in the Dining Hall according to sanitation standards Maintain appearance and uniform standards Be present on the floor during meal periods to supervise dining hall operations Collaborate with the chef on duty to maintain high standards of food presentation and sanitation Train and develop all FOH dining personnel Provide ongoing feedback to service personnel on standards and performance Communicate daily with Head Chef and Camp Directors on all aspects of dining hall operation Engage with diners for general feedback Ensure the dining hall is open and prepared 15 minutes prior to service Implement a checklist system to facilitate dining hall operations Follow Wolfoods environmental initiatives to minimize waste and energy use Be knowledgeable of all menus and specifications Maintain constant follow-up with dining hall standards Follow safety practices to minimize risk Responsible for daily reporting Effectively communicate with subordinates, co-workers, and supervisors Motivate and foster a positive work environment Attend in-service training and staff meetings Understand food safety for special diet preparations and allergies Interact professionally with campers, staff, and parents Control inventory and place orders Project management and communication Uphold Wolfoods Standards of Service and Quality Maintain Health Department sanitation standards Manage staff and client relations Follow the Wolfoods Camp Food Training Program Use weights and measures to execute recipes accurately Prepare all menu items and special event requests Follow standardized recipes Ensure production timing, quantity, quality, and plating accuracy Lead in planning, scheduling, directing, and training Utilize cross-utilization and minimize waste Estimate production needs, set par levels, order supplies, and maintain inventory Place accurate food orders ahead of time Ensure kitchen and equipment meet health standards Teach and enforce safety regulations Specialized food preparation for events Assist in recipe development and tasting Assist in planning menus and recommend equipment purchases May act as Front of House supervisor when necessary Qualifications & Experience
4+ years commercial kitchen experience in a lead role Minimum three professional references required with application submission Proficient in relevant skills for the role Quality-driven and self-motivated High level computer literacy Uphold Health Department standards Able to lead a team and take direction Minimum 6-day work week (70 hours) Must live on-site in a rural setting with possible shared living spaces Ability to stand for long periods Ability to lift and carry 50 pounds Ability to bend, stretch, and reach for extended periods ServSafe Manager Certification required ServSafe Allergens Certification required before camp start (company sponsored) Ability to work under pressure in variable temperatures Must be able to cook from scratch Institutional and batch cooking experience preferred Ideal Candidates
