SUMMARY

The Sous Chef is responsible for planning andmanaging food preparation in the kitchen, serving as the assistant to the Chefand second in command. This role oversees daily kitchen operations, includingordering, inventory control, training new staff, and maintaining high standardsof food quality and safety. The Sous Chef ensures proper food handling, storage,and sanitation while supporting and supervising the culinary team. In theChef’s absence, the Sous Chef leads all kitchen activities, ensuring smooth andefficient operations. Able to perform the duties of the Chef in theirabsence. Assist the Chef with managing the day-to-dayoperations. Assists Chef in training new line cooks, prep cooks,and dishwashers. Monitors the Kitchen Staff, including, but not limitedto, enforcing service standards, uniform compliance, company policies, andServeSafe requirements. Ensure a sanitary work environment and that all localcodes and policies regarding proper storage, handling, and serving of food arebeing followed. Ensure that food storage areas are clean and properlyorganized at all times. As requested, inspect food storage areas,utility/janitorial closets for upkeep and supply control. Manages production areas for efficient daily operation. Reads the menuto estimate food requirements and orders food from supplieror procures food from storage. Measures and mixesingredients according to recipe to prepare soups,salads, gravies, desserts,sauces, and casseroles. Bakes, roasts,broils, and steams meats, fish,vegetables, and otherfoods. Adds seasoning to foods during mixing or cooking. Observes and tests foods being cooked by tasting,smelling, and piercingwith fork to determine degree of doneness. Carves meats, portions food on servingplates, adds graviesand sauces, and garnishes servings to fill orders. Displays knowledge and follows all procedures in sanitation and sanitary food handling. Keeps work area clean and organized using soap and sanitizing agents. Washes, peels,cuts, and shredsvegetables and fruitsto prepare them for use. Butchers chickens, fish, and shellfish. Bakes bread,rolls, cakes, and pastry. Loads or unloads truckspicking up or delivering food and/or supplies. All other reasonable and related dutiesassigned by theChef Dress appropriately per the Company’s standardsoutlined in the Employee Handbook. Attend periodic staff meetings, in-service training,and mandatory meetings as required. Observe Residents’ Rights, as postedwithin the facility, to include any updates thereto. Mandated reporting – if you suspectany verbal, physical, emotional, financial, or neglectful treatment toward aresident or staff member, report it to your supervisor immediately. In Emergencies, assist residentsaccording to the Emergency Plan of the facility. SUPERVISORY

QUALIFICATIONS

EDUCATION

and/or

EXPERIENCE High school diplomaor GED is preferred, or equivalent experience. Formal culinarytraining or a degreein culinary arts is preferred. Must have atleast two (2) years of priorculinary experience. Supervisorexperience preferred. According to Title 22 requirements, employeemust be at least eighteen(18) years of age. COMMUNICATION SKILLS

Ability to communicate clearly and effectively. Interact well with our Carlton Family– residents, familymembers, all staff members, future residents. Must have basic knowledge of food preparation, service standards and resident relations and etiquette. Ability to calculate units of weightand measure, both liquid and dry, as required byrecipes. Ability to use commonsense and understanding to carry out instructions furnished in the written, oralor diagram form. Reasoning Ability oMust have basic knowledgeof food preparation, service standardsand resident relations and etiquette. o Ability to apply common senseunderstanding and carry out writtenor oral instructions. CERTIFICATES, LICENSES, REGISTRATIONS

Serve Safe certification is preferred. Current First Aid Certification (obtained through community) DOJ and FBI fingerprint clearance must be completed prior to workingin community (obtained through community) Health screeningand negative TB test, must be less than six (6) months old. (obtainedthrough community) Mustbe authorized to work in the UnitedStates of Americaand provide sufficient work authorization documentation(s)
