Miami Jewish Health is one of the largest providers of healthcare and living options for aging adults in the Southeast. We operate Florida PACE (Program of All-Inclusive Care for the Elderly) Centers, the largest PACE program in Florida, which serves as health plan, healthcare provider, and social center designed for older adults with complex medical needs. We have four adult day health centers that serve participants in Miami-Dade and Broward counties.
Job Title: Director Dietary Services
Job Summary
The Director of Dietary Services provides strategic leadership and operational oversight of all dietary and nutrition services across multiple PACE centers within the organization. This position is responsible for ensuring consistency, regulatory compliance, quality improvement, and innovation in nutrition care delivery. The Director leads a team of site-based dietitians and nutrition professionals, implementing best practice protocols and enhancing service offerings to optimize health outcomes for all participants.
Essential Job Functions
Provide strategic direction and centralized oversight of dietary services across all PACE centers under the organization.
Supervise and mentor a team of Registered Dietitians and site-level dietary personnel, ensuring alignment with corporate goals.
Develop and implement standardized best practice protocols, workflows, and performance metrics for nutrition care.
Lead enterprise-wide initiatives to enhance the participant dining experience, support chronic disease management, and improve nutrition-related outcomes.
Ensure consistent compliance with state and federal regulations, including CMS and 42 CFR 460.78 and 460.102 dietary requirements.
Oversee menu planning and approval processes to ensure therapeutic, culturally appropriate, and palatable meals across sites.
Collaborate with IDT leadership at each center to integrate nutrition care into the overall plan of care.
Analyze trends and audit findings to develop improvement plans and guide staff training.
Serve as the subject matter expert and corporate liaison on nutrition-related matters, including emergency planning and vendor relations.
Develop and manage departmental budgets and contracts related to food service vendors or dietitian consultants.
Job Requirements
Education:
Bachelor’s degree in Nutrition, Dietetics, or related field; Master’s degree strongly preferred.
Experience:
Minimum 7 years of progressive leadership experience in dietary services, including multi‑site oversight in healthcare or senior care settings. Deep understanding of regulatory requirements for PACE, long‑term care, and Medicare/Medicaid programs.
Licenses/Certifications:
Registered Dietitian Nutritionist (RDN) with state licensure where applicable.
Functional Demands – Environment and Conditions
Normal working condition with adequate lighting and ventilation.
Toxic or caustic chemicals, bio‑hazardous waste, flammable, explosive gas exposure.
Routine exposure to blood/body fluids/tissues.
