Food and Beverage Manager, Tutu's Food Court
Under the direction of the Senior Manager, Food & Beverage, the Manager, Food & Beverage is responsible for the overall operation and profitability of assigned venues, which includes developing and maintaining well-performing teams and achieving financial and enterprise objectives.
Job includes maintaining inventory control, ensuring high-quality customer service, compliance with health and safety regulations, reviewing scheduling and staffing plans, preparing reports, and maximizing team morale.
Essential Duties And Responsibilities
Accountable for all FOH team members assigned to the venue(s). Implements training programs to ensure high-quality service aligned with brand standards.
Ensures optimal operations during business hours, monitors customer satisfaction and resolves complaints.
Manages venue to budget revenue, food cost, expense, headcount, and profit. Explains variances and implements action plans.
Collaborates with venue chef to manage food costs and maintain menu quality.
Maintains accurate inventory of all china, glassware, cutlery and supplies.
Ensures venue cleanliness, sanitation and equipment maintenance.
Performs other duties as assigned to support efficient operation.
Supervisory Responsibilities Conducts hiring, training, performance evaluation and direction, addressing complaints and resolving problems. Makes hiring decisions and designs development plans.
Education, Experience and Qualifications
Bachelor’s degree in Hospitality Management, Food Service, Business or related field (required).
Minimum 3 years of restaurant or related hospitality experience (required).
Bar experience strongly preferred.
Minimum 3 years of supervisory experience (required).
Alternative experience may be considered in lieu of educational requirements.
Knowledge, Skills and Abilities
Proficient in Microsoft Office (Outlook, Excel, Word).
Strong leadership and people management skills; can collaborate and motivate.
Effective communicator, able to build commitment and overcome resistance.
Excellent delegation, multitasking, prioritization and time‑management in fast‑paced setting.
Maintains confidentiality and complies with legal/regulatory requirements.
Fluent in English, able to read/write/communicate.
Basic math skills.
Friendly and efficient service to guests and team members.
Emotionally resilient, works under pressure during busy periods.
Required Licenses, Certifications and Registrations
May need gaming license per tribal commission.
Must obtain and maintain Responsible Beverage Service (RBS) certification.
Must obtain and maintain ServSafe certification.
Valid driver's license and vehicle insurance with minimum liability limits for driving requirements.
Physical Requirements / Working Conditions
Primary work environment: climate-controlled casino & resort.
Travel to meetings, trade shows, conferences.
May work evenings, weekends, holidays.
Fast‑paced, high‑demand environment.
Lift/push up to 10 pounds occasionally, up to 40 pounds occasionally.
Sedentary with computer usage.
Physical activities: balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, repetitive motions.
Hearing and speech for conversation, meetings, video conferences, telephone.
Visual acuity for computer work, reading, inspection.
Mobility for walking, bending, kneeling, vehicle operation during events.
Endurance to sit/walk/stand extended periods.
