Base Pay Range $11.00/hr – $11.00/hr

Responsibilities The Captain’s responsibilities include: having detailed knowledge of the menu and wine list, articulating these details with enthusiasm, taking all guest orders, executing beverage service to proper standards, assisting with food delivery and clearing tables, collecting payment, and most importantly, understanding guests and providing them with the experience they desire.

Position Requirements

Adhere to the "Steps of Service" as outlined in the service manual.

Maintain detailed knowledge of the menu and stay abreast of menu changes.

Know the wine list and be able to pair wines by the glass with menu items.

Know the house cocktails, basic ingredients, and taste.

Be fluent in the use of the POS system.

Adhere to the work schedule.

Adhere to restaurant grooming, uniform, and hygiene standards.

Act professionally and accommodatingly, always maintaining composure.

Serve alcohol responsibly.

Have a fine dining experience – a must.

Wine knowledge preferred.

During Service

Perform assigned side work.

Take all guests’ orders as necessary.

Ensure that the necessary flatware, glassware, and other extras for each course are set prior to food delivery.

Oversee and assist food delivery by runners.

Execute beverage service and adhere to proper wine service standards.

Participate with the Server Assistant in clearing tables.

Understand thoroughly and articulate with enthusiasm the details of our menu.

Anticipate needs of the guest and exceed their expectations.

Minimize breakage with proper handling of china and glassware.

Assist the dishwasher in scraping plates, racking glasses, and soaking flatware.

Clean and maintain your work area at all times.

Assist other stations when requested.

Collect payment; check accuracy before presenting.

Handle banking for station; all handling of gratuities must take place out of public view.

Communication

Communicate with managers and supervisors; identify and report problems immediately.

Communicate with the service team; prioritize all station’s needs and know when to ask for help.

Upsell house specialties and daily specials to the guest.

Provide information that the guest needs, wants, or does not yet know they want, tactfully and confidently.

Answer general questions about the property, restaurant, and other BLT restaurants.
