Job Summary The Performance Chef, Executive Sous will improve player health and performance through the creation of nutritionally optimal meals and snacks for the players and coaches. The High‑Performance Executive Chef will be responsible for overseeing the culinary performance staff and for providing fresh, local, balanced, and nutrient‑dense meals tailored specifically to the needs of the players and coaches.
Salary $70,000 – $78,000
Responsibilities
Develop recipes, source, build and implement menus for all player, coach and staff meals with a focus on nutrient‑dense foods to optimize health and performance.
Lead culinary staff, including hiring, termination, scheduling, performance reviews, and coordination with HR.
Assist in establishing a culinary budget, menu costing, inventory tracking and invoice processing.
Implement procedures for serving food and for rotating and storing food within coolers, freezers and dry storage, applying a FIFO approach and maintaining food safety and organizational standards.
Develop guidelines for discarding or returning products that do not meet standards.
Establish relationships with quality, nutritional‑mindful vendors to procure seasonal, local and sustainable ingredients.
Synchronize and prepare lunches for the business and administration sector during the off‑season.
Athlete‑Centered Approach
Knowledge of nutrition needs and demands of athletes.
Collaborate with team dietitians, advising on culinary methods and techniques for meals related to the athletes’ needs.
Skills & Abilities
Comprehensive understanding of menu item specifics including dietary restrictions, food allergies, ingredients, preparation processes, holding and serving temperatures, and HACCP guidelines.
Experience & Education
A minimum of 3 years (preferably 1‑3) culinary management experience in an athletic nutrition setting (e.g., professional sports team, collegiate athletic department, or Olympic team).
Bachelor’s degree in culinary arts, nutrition, food science, or related field a plus.
