Reporting Structure A Butcher will report directly to the Executive Chef and Sous Chef team with a dotted line relationship to the Corporate Executive Chef and Chef/Owner, Danny Grant.
What You Will Do
Whole fish butchery
Fabrication of whole sides of dry‑aged beef
Sharpen and adjust cutting equipment
Receive, inspect, and store meat upon delivery
Cut, bone, or grind pieces of meat
Store meats in refrigerators or freezers at the required temperature
Keep inventory of meat sales and order meat supplies
Clean equipment and work areas to maintain health and sanitation standards
Negotiating and confirming orders with suppliers
Adhering to food safety and sanitation control
Who We Are Looking For
A minimum of 2 years of experience in kitchen preparation and cooking; at least 6 months experience in a similar capacity
Ability to use hand tools, stand or walk for extended periods, lift heavy items, and work in cold environments
Must be able to work in a fast‑paced environment while standing (up to 8 hours) for long periods of time
Must be able to bend, stoop, squat and lift up to 50 lbs. on a regular and continuous basis
Must be able to work on holidays, nights and/or weekends
Must have reliable transportation
This role requires the ability to move and lift up to 25 lbs. Standing, sitting, or walking for extended periods of time and ensuring a professional appearance in a clean uniform are also required.
