Job Title: Garde Manger (Garmo) Cook – Cold Station Specialist

We’re looking for a skilled and reliable Garde Manger Cook to take ownership of the cold station and help us deliver on our promise of excellence.

About the Role:

The Garde Manger (Garmo) Cook is responsible for executing all cold dishes on the menu — from raw seafood, pickled vegetables, and dressed salads to intricate garnishes and composed plates. You’ll be part of a professional, fast-paced team where technique and detail are taken seriously.

Key Responsibilities:

  • Cold Dish Execution: Prepare all cold appetizers, salads, crudos, garnishes, and dressings with precision, speed, and attention to detail.

  • Plating & Presentation: Maintain consistency and visual excellence on every plate, following Sesamo’s standards for clean, elegant presentation.

  • Station Readiness: Set up and break down your station daily, keeping it clean, organized, and fully stocked for service.

  • Batch Prep: Execute prep for your station — including pickling, blending dressings, portioning proteins, and prepping mise en place — according to kitchen recipes and daily prep sheets.

  • Cross-Training: Support other stations (especially pasta or hot line) if needed during service or prep time.

  • Quality Control: Ensure all ingredients are fresh, rotated properly, and up to our strict quality standards.

  • Service Collaboration: Communicate with the expo and line cooks during service to ensure smooth, timely dish execution.

Who You Are:

  • Experienced: 1–2 years of experience working in Garde Manger or in a high-end kitchen with a strong cold station.

  • Organized & Detail-Oriented: You work clean, think ahead, and care about the small details — because they matter.

  • Focused & Reliable: You show up prepared, stay focused during service, and take pride in putting out great food every single day.

  • Calm Under Pressure: You can stay composed and execute consistently in a fast-paced environment.

  • Team Player: You collaborate well, communicate clearly, and support the overall success of the kitchen.

Bonus Skills (Not Required):

  • Experience with raw seafood (crudo, tartare, ceviche)

  • Pickling, fermenting, or basic preservation techniques

  • Knife skills and precise vegetable work
