Job Summary An inspirational and organized leader who ensures the overall success of daily kitchen operations, including recruiting, training, food preparation, and maintaining resident and employee satisfaction while maximizing financial performance. The Executive Chef delivers show‑quality food, meets monthly budget and food & labor cost targets, and enforces safety and sanitation protocols.
Responsibilities
Lead daily culinary production—meal preparation, quality and presentation, safety and sanitation compliance, productivity and performance, cost control, and profitability.
Determine food presentation and create decorative displays.
Guide menu development based on product availability and create seasonal specials.
Source fresh ingredients and monitor freshness of produce and meats.
Maintain product consistency through inspections of seasonings, portions, and appearance.
Research customer preferences and develop menu incorporating local foods and flavors.
Prepare and cook foods for all guests, including special functions.
Demonstrate new cooking techniques and equipment to staff.
Supervise and coordinate activities of cooks and kitchen workers.
Ensure compliance with all health, safety, sanitation standards.
Provide guidance to subordinates, set performance standards, and monitor performance.
Communicate safety procedures, code details, and ensure employee understanding.
Monitor quality of raw and cooked food products to meet standards.
Enforce food safety and sanitation guidelines.
Maintain purchasing, receiving, and food storage standards.
Business & Financial Acumen
Participate in community business strategies aligned with the client’s mission and vision.
Manage controllable departmental expenses—food cost, supplies, uniforms, and equipment.
Develop and implement purchasing and receiving guidelines and controls.
Analyze financial and operational data to adjust plans, labor, and operating costs.
Develop, implement, and oversee the department budget, monitoring labor and food costs to meet/exceed objectives.
Identify revenue and expense opportunities and potential problems.
Control food cost, labor, and other expenses; monitor actual versus budgeted expenses.
Oversee food inventory, purchasing, and disbursement of all supplies.
Schedule staff based on forecasted volumes.
Ensuring Exceptional Customer Service
Create 100% resident satisfaction by training employees to deliver best‑in‑class service.
Maintain a professional attitude and appearance when engaging residents and staff.
Improve service through communication and individual coaching.
Support service behaviors that exceed customer satisfaction and retention.
Empower employees to provide excellent service, establishing clear expectations.
Provide genuine hospitality and teamwork consistently.
Use teamwork to support guests and employees.
Seek opportunities to improve the customer experience via resident feedback and strategy development.
Review satisfaction data to identify improvement areas.
Handle guest problems and complaints promptly.
Team Building & Management
Lead regular team member meetings.
Set goals—performance, budget, team—aligned with organizational objectives.
Solicit feedback and maintain an open‑door policy, addressing employee concerns.
Develop and implement engagement practices.
Ensure fair and equitable treatment of employees.
Provide training and resources for job responsibilities.
Supply necessary tools for responsibilities.
Communicate performance expectations and give ongoing feedback.
Coach and counsel team members to reach potential.
Preferred Qualifications
A.S. or equivalent experience.
Minimum 5 years of progressive culinary/kitchen management experience.
Extensive catering experience (plus).
High‑volume, complex foodservice operations experience (highly desirable).
Institutional and batch cooking experience.
Hands‑on chef experience required.
Comprehensive knowledge of food and catering trends with focus on quality, production, sanitation, cost controls, and presentation.
Proficiency with computers—Microsoft Office, Outlook, email, internet.
Willingness to participate in client satisfaction programs/activities.
ServSafe certification (highly desirable).
