Responsibilities
Direct food service operations including food preparation, dining room operations and dining delivery services.
Purchase food, manage inventory, and ensure effective cost controls and vendor service and quality.
Ensure the highest nutrition and food quality for residents’ health and pleasure.
Comply with all federal, state and local regulations to maintain sanitary and safe operations.
Plan and execute entertaining dining events and themes in conjunction with Activities Director, Marketing Director and other staff.
Hire, train and manage supervisory staff for kitchen, dining room, catering and delivery services.
Coach supervisors on staffing levels, motivation, discipline and training.
Collaborate with chefs and cooks to develop and maintain pleasing and nutritious menus.
Assess resident preferences through surveys and daily contact and incorporate those preferences into menus and events.
Coordinate with dieticians, nursing staff and care associates to ensure proper meal selection, preparation and delivery.
Develop department budget, approve food orders and maintain inventory to meet demand while minimizing cost and waste.
Encourage socialization and enjoyment of residents through food presentation and events.
Improve dining room décor and condition for a safe and pleasant experience.
Network with Regional Food Service Directors to improve operations, reduce costs and obtain new program ideas.
Perform all duties as assigned by supervisor.
Qualifications Education and Experience
College degree in food service or hospitality management preferred.
Minimum 8 years of progressive experience in the food service industry, including at least 3 years in a supervisory role overseeing food prep and customer service.
Experience managing food inventories and budgets.
Certifications, Licenses, and Other Special Requirements
Current ServSafe Certification required.
Hold any required local, state or county food handling/sanitation licenses and/or certificates.
Management/Decision Making
Apply existing guidelines and procedures to make varied decisions within the department.
Use sound judgment and experience to solve moderately complex problems based on precedent, reasonableness or other justification.
Manage a large number of associates directly and through supervisors.
Knowledge and Skills
Extensive knowledge of food preparation and delivery, food safety regulations and budgeting.
Ability to address staff, residents and visitors courteously.
Understanding of dining and nutritional needs of residents and ability to incorporate resident desires into dining operations.
Working knowledge of a functional discipline related to food service.
Willingness to communicate resident needs to other staff to assist with care.
Physical Demands and Working Conditions
Standing, walking, sitting, using hands and fingers, reaching, climbing or balancing, stooping, kneeling, crouching, crawling, talking, hearing, tasting, smelling.
Ability to lift up to 50 pounds.
Vision and interaction with co‑workers, residents or vendors required.
Occasional weekend, evening or night work; exposure to communicable diseases, latex, blood‑borne pathogens, chemicals, biological hazards; injury from falls, burns, odors or equipment cuts.
Occasional travel.
