Base pay range $60,000.00/yr - $80,000.00/yr

Gage Hospitality Group is currently seeking a fun and passionate Pastry Sous Chef to join our team at The Gage. This individual will be responsible for ensuring the restaurant's high productivity, quality, and customer service standards are maintained.

Pastry Sous Chef Responsibilities:
Operates and manages the pastry section of the kitchen while working alongside other chefs
Show proficiency in baking techniques such as prepping, melting, measuring, tempering, baking whipping, icing, layering, juicing and decorating in a high volume setting
Assist in the production of high-quality breads, cakes, cookies and other pastries
Plate and garnish desserts in an appealing and creative way
Be able to produce all components for plated desserts, including ice creams and sorbets
Comfortable working with ovens, placing dough in pans and or molds/sheets and baking products in a high traffic kitchen
Be able to check the quality of raw materials to ensure that standards are met
Prepare a variety of baked goods for multi-units and catering
Review menu specifications and ensure all pastry team members are following guidelines.
Oversee the pastry line and inventory; lead the preparation, production and presentation of baked goods, pastries and desserts for the restaurant.
Decorate pastries and desserts to ensure beautiful and tasteful presentations
Assist in training and developing new seasonal recipes and menus to keep up with the latest trends
Monitor and order ingredients, supplies and equipment when needed
Ensure the pastry section of the kitchen adheres to health and safety regulations
Work alongside Corporate Pastry Chef to identify staffing needs and help recruit and train new hires
Communicate cordially, effectively and clearly with all employees, managers and guests
