Summary La Jolla Beach & Tennis Club is currently seeking a highly skilled Line Cook 1 to join our team at our beautiful oceanfront property. Essential Duties and Responsibilities
Prepares entrees and hot appetizers for patrons.
Prepares food in quantities according to menu and number of persons to be served in a timely manner.
Prepares a large variety of finished products (grains, legumes, starches, bread pudding, savory cakes and vegetables).
Methodically controls the flow of service according to the firing of tickets for pickup.
Controls the pace while supplying all plates to the hot line with starches and other miscellaneous ingredients.
Prepares and presents menu items following recipes and designated presentation.
Properly seasons all food items and tastes for accuracy prior to serving.
Achieves the proper consistency of all starches to include grains, savory cakes, bread pudding.
Prepares and plates food to order in accordance with approved recipes.
Maintains work area and cooking equipment in proper and sanitary order.
Covers, dates, labels, and stores food items and ingredients.
Communicates with expeditor to ensure smooth transition of finished plates to front of house.
Responsible for complete setup of mise en place for all menu items fifteen minutes prior to service.
Adheres to proper rotation and sanitation standards at all times.
Assures overall freshness, quality, and cooking temperature of finished products.
Properly closes and turns over work area at the end of shift, ensuring proper storage and minimal waste.
Attends regularly scheduled kitchen meetings.
Other duties may be assigned.
Outcome As the timing of the entire hot line depends on the pace set by the line 2 position, meeting the required performance ensures proper speed of service to our guests. Compliance with sanitation regulations, consistent high-quality standards, accurate food preparation, and attractive food presentation will result in overall guest satisfaction and repeat customers.

Education and Experience One-year certificate from college or technical school; or three to six months related experience and/or training; or an equivalent combination of education and experience.
Language Skills Ability to read and interpret documents such as safety rules, recipes, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively in English to customers, management, and employees.
Mathematical Skills Ability to add, subtract, multiply, and divide. Ability to calculate figures and amounts such as discounts, proportions, percentages and volume.
Reasoning Ability Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
Certificates, Licenses, Registrations Must be able to obtain and maintain a current Food Handlers Card.
Physical Demands Physical demands include regular standing, walking, using hands to handle, and occasionally lifting weights up to 50 pounds. Specific vision abilities required include close vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
Working Conditions The work environment includes wet and/or humid conditions, extreme cold, and extreme heat. The employee may work in high, precarious places and in outside weather conditions, and may be exposed to fumes or airborne particles, toxic or caustic chemicals, and risk of electrical shock. Noise level is usual moderate to loud. Employees are required to perform all tasks as safely as possible and to adhere to applicable safety procedures.
Interaction Employees interact with all kitchen co-workers and dining room staff daily, occasionally with maintenance, front desk, and other internal customers. On occasion, employees may interact with visitors, guests, vendors, or other external customers.
Scheduling This company operates seven days a week, 24 hours a day. Shifts will generally be rotated as much as possible to be fair to everyone. At times it may be necessary to move you from your accustomed shift if business or task assignments demand (i.e., holidays, weekends, high-volume business periods). Business needs determine the number of hours you work.
