In keeping with Chef Michael Tusk’s cuisine, Cotogna showcases the best of Italian viticulture with an emphasis on organic, small‑scale wines true to their terroir.

Base Pay Range $85,000.00/yr - $90,000.00/yr

POSITION KEY RESPONSIBILITIES

Oversee all aspects of kitchen operations, including food preparation, cooking, and plating.

Support Chef de Cuisine and Executive Sous Chef in all BOH operations and communicate goals for the kitchen department and overall vision for the restaurant.

Manage labor.

Oversee inventory.

Assist in enforcing health and safety standards in the kitchen, walk‑ins and dry storage.

POSITION REQUIREMENTS, KNOWLEDGE, AND ABILITIES

Culinary experience in a fine dining restaurant.

At least 1 year experience as a Sous Chef in a similar concept.

Culinary degree preferred.

Willingness to comply with all health and safety standards.
